The transformation of grapes
In the production of various alcoholic beverages it is the mashes, i.e. the mashed grapes, that initially play the main role. The term “mash” however is also used for the brewing of beer. Mashes are mixtures containing starch and sugar. Various processes of fermentation refine the mash and transform it into wine, beer or hard liquor. Either the sugar is converted into starch or, in case of fruit mashes, the sugar is converted into alcohol.
